Greetings from Amsterdam! Since my last post, I have managed to hop onto a plane and transport myself to a houseboat here. I came just in time for Amsterdam’s gay pride weekend! I have never seen so much pink and glitter in my life- I was very impressed. Even though I’ve only been here for three days, I’ve already fallen in love with the place. Everyone bikes around, a majority of their food is organic, and they make amazing pancakes. There are trees on nearly every block I’ve walked on, and people are super friendly. Also, all the cafes are lined with benches outside so people can enjoy the sunshine. What’s not to love? Photos soon- but for now, a thank you and a recipe for polenta with spinach, mung beans, and peas. I want to thank Ruby for nominating me for a My Favourite Things award. 3.) Colourful meals with lots of fruits and veggies!
4.) Watching Modern Family/Game of Thrones/the Newsroom while snuggled up on the couch with Lewis.
5.) Cooking and baking in my kitchen while singing and dancing.
6.) Cute animals for me to cuddle. Friends and family are good too.
7.) Trees + sunflowers + gerbera daisies.
8.) Being able to read other blogs and connect with other bloggers on the web. I love it when people comment on my posts!

Now, a recipe for spring (or summer) polenta with spinach, mung beans, and peas :)
Polenta with Spinach, Mung beans, and Peas
1 cup polenta
2 cups water
1/2 cup spinach
1/2 cup mung beans
1/4 cup peas
1/2 cup broccoli, chopped (optional)
1 teaspoon thyme
3 cloves garlic, minced
In a small pot, cook the mung beans by boiling them in 2 cups of water. Sprinkle a little salt.
While the mung beans cook, heat the olive oil on a frying pan on medium heat. Pan-fry the garlic until fragrant.
Cook the spinach and peas. Add the mung beans once they are cooked. Stir.
In a small pot, cook the polenta in 2 cups of water. As the polenta cooks and absorbs the water, gradually add more water until the polenta is cooked thoroughly and soft. Sprinkle the thyme and mix.
Pour the polenta onto a plate, and top with the spinach, peas, and mung beans. Season with sea salt, pepper, and thyme. Enjoy :)
*If you aren’t vegan, feel free to add in a cup of grated parmesan or gruyere and top everything with a runny-yolk fried egg!
